This small-production sparkling wine, made from 80% Pinot Noir and 20% Chardonnay, opens with notes of lemon curd, toasted bread, honeysuckle, caramel and green apple. Over time, fresh cut hay and meringue emerge, along with a hint of tangerine. On the palate the mousse is delicate and the wine is broad and rich – like a perfectly-cooked beurre blanc. The finish is long, and redolent of brioche, hay and Asian pears.
