This is another favorite image from the Residency that shows the care and attention that is applied to every iteration of a repetitive task. The cork on each of the thousands of bottles of REX HILL 2019 Rosé is finished with a wax disk that is applied by hand. I found this activity fascinating. Ana has heated the wax to the correct temperature to flow off the spoon, so that the resulting disk is shaped correctly and does not have any bubbles. If it isn’t perfect the wax is removed and reapplied.
