Cleanliness is an integral part of making quality wine. All equipment is cleaned before and after use. Deep-cleaning a large press takes the better part of a day. It needs to be taken apart, carefully cleaned, and then reassembled. This is a process that involves someone getting inside the body of the press. This image shows a view of harvest that very few people see. This is the reassembly phase, and Sean is putting the juice channels back in place.
We can see the press-bladder against the wall on the right. Sean is using a headlamp to see the bolts he needs to tighten, giving us this incredible lighting. It’s loud, metallic, and industrial inside the press. I had been attempting this photograph for weeks, and was delighted when it all came together for the last clean of the season.
