Here we see winemaking at a larger scale, but there is still much human interaction. The fermented liquid is drained off first, which might also carry some solids; these need to be captured and transferred to the press along with the solids that remain in the tank. In this picture Alma is controlling the flow of juice so that she can manage any solids that get carried out, and so that the pump attached to the sump can be in equilibrium with the flow rate.
